Ingredients:
2 eggs
1 yolk
100g sugar
180ml mango juice
150g plain flour
1/2 tsp bicarbonate of soda
75g oil ( I use sunflower oil)
8 pieces of dried apricots (diced)
Method:
- Sift together plain flour and bicarbonate of soda, set aside.
- In a mixing bowl, whisk together eggs and sugar till soft peaks.
- Mix in mango juice, beat till combine.
- Gently fold in flour mixture, diced apricots and oil, taking care not to deflate the eggs and sugar mixture.
- Pour batter into muffin pan, lined with muffin cups.
- Bake at 180 degrees celsius for 15 - 20 minutes or till an inserted skewer comes out clean.
